Winemakers Comments

This parcel of single vineyard Heathcote Shiraz stood out in the 2014 vintage from day one. Its restrained power and balance impressed us so much that we wanted to create an opportunity for it to stand on its own two feet. We decided to hold this wine back a few years to mature in bottle, ensuring it displays all the characters that enchanted us in barrel.

Vinification

This small parcel of hand picked shiraz was transported to the winery and immediately destemmed into small open pot fermenters. The wine was cold soaked and then left to ferment naturally using the indigenous yeast strains from the vineyard and winery microflora. Following fermentation the wine remained on skins for three weeks before pressing and racking to French oak for maturation.

Maturation

12 months in 30% new French oak barriques and the remainder in 2-8 year old French oak barriques.

Appearance

Deep crimson red.

Aroma

An intriguing nose with notes of sour cherries and plums mingled with toasted spices and delicate violets.
