How is the wine made?
Saignee Pinot Noir hand-picked from the Full Moon Vineyard in Gladysdale, Upper Yarra Valley. Drained to seasoned French oak barriques and wild fermented, slow and cool. Lees stirring and left to mature in oak for 6 months before racking and blending. The Pinot Gris spent a small amount of time on skins before being pressed to tank for fermentation with aromatic yeast strains. The wine was blended with minimal fining before bottling.

NEW Pacha Mama Experimental Range  

As curious winemakers we are never shy to say yes to a last-minute tiny parcel of an alternate grape variety. We are continuously experimenting with new and interesting winemaking techniques and creating delicious blends. It’s what keeps us connected to our wines and our fruit, and most importantly, it’s what sparks joy for us as winemakers. Most of the time these small parcels have nowhere to go so they are blended away. We created this range as a new home for these experimental parcels so that we could finally share them with the world. They are all small batch, limited releases that will change each vintage.

“57/43% Yarra Valley pinot noir/ Alpine Valleys pinot gris. A range of winemaking techniques employed here as part of Pacha Mama's experimental (EXP) range. A serious rosé by any reckoning, that brings a sense of intrigue. No one grape is immediately obvious, rather, it's a gradual build of intensity. Wild berries, pear and apple combine with lighter floral elements – rose petal and jasmine – leaving a rosé of spice and texture, fineness and clean acidity with flavour running long.”

“Salmon-pink in appearance. Lifted aromas of red apple, cherry, dried herbs and citrus rind. Fresh and lively in flavour, crunchy red fruits, tangy acidity and a decent kick of phenolic grip provides texture and a drying mouth-feel.”
