100% Shiraz.

Heathcote - up near Colbinabbin!

What does it smell like?
Lifted, rich and enticing with notes of blackberries, plums, floral notes and warm winter spices.

How about the taste?
Silky smooth, bright and balanced, loaded with concentrated black berry fruits. Juicy brambles, nutmeg and dark chocolate envelop the palate, supported by ripe tannins and great length.

What food goes with this wine?
A great aged cheddar or grilled BBQ lamb.

How is the wine made?
Like all of our wines it’s all about picking the grapes when they are perfectly ripe! We pick these grapes over night so they are cool when they arrive at the winery for the morning crew to tip into tanks for ferment. Some parcels were fermented wild whilst the others were inoculated with cultivated yeast strains (fancy way of saying speciality yeast from a packet). The wine was left on skins for up to three weeks before pressing and racking to French oak for maturation. Each parcel was kept separate until blending to build layers and complexity into the wine.

Does this wine spend any time in oak barrels?
It sure does. 9 months in 25% new French oak barriques and the remainder in 2-6 year old French oak barriques.

Winemakers Comments
Our fruit is sourced from carefully selected vineyard sites that sit along the side of the Mount Camel Ridge on the ancient red volcanic soils. Geologists say the soils are over 500 million years old and it’s these soils that are renowned for producing rich and complex shiraz. We strive to harness the power often found in Heathcote Shiraz to create a wine of elegance and balance.

“You can’t be mistaken on the nose that this is Heathcote Shiraz, there are some reductive charcuterie notes that reveal generous plum that is lifted by dried spices. Plum and dark cherry enjoy supple milk chocolate and work amongst tannins that have impact but are well balanced. Brown spice and undergrowth give definition to drying dark berry fruits to finish. “
