75% Pinot Noir and 25% Shiraz.

Yarra Valley and Heathcote

What does it smell like?
All the pretty and evocative aromatics of Pinot Noir with the power and spice of Shiraz. It’s perfumed and loaded with red currants, black plums, and wild raspberries and soft spices humming in the background.

How about the taste?
Ripe plums and sour cherries are beautifully balanced with a juicy acidity, velvety tannins and a long finish. With some soft bubbles due to dissolved carbon dioxide from the canning process to keep the wine fresh! Just pour it into a glass and let it sit for a while before drinking for the bubbles to naturally disappear.

What food goes with it?
A picnic in the park. Casual conversations with mates and a grazing platter. A good book, a couch and your most comfortable clothes.

How is it made?

The Pinot Noir was hand picked, de-stemmed and cold soaked in open top fermenters for a few days before wild fermentation naturally kicked off. After ferment the wine was pressed into 3 year old oak and matured for 7 months.

The Shiraz was delicately machine harvested in the cool of the dawn. Then transported to the winery and immediately de-stemmed into an open top fermenter and inoculated for ferment. 10 days on skins before being pressed to oak. Maturated for 7 months in oak.

We drained 25% of the Pinot Noir out of barrel and topped it up with Shiraz. The barrel was then racked into kegs and we canned it. No fining or filtering.
